- A: it's about 20 minutes per pound and you really want to cook it at 350 degrees for maximum moisture. Cover it with heavy duty aluminum foil.I put butter between the meat and skin on the bird as much as possible to help keep it moist also.Also, buy a meat thermometer and just pull the bird out when the center of the thigh (make sure you don't touch a bone) reads 160 degrees. Then cover it with foil to allow for carry over heat. That will usually add about 5 extra degrees of heat, because it's not really safe to eat until 165 degrees but it's at it's most moist at that temp anyway. Also, about 10 minutes before you pull the bird out of the oven uncover it and let the top brown.If you are stuffing the bird it will take longer because the stuffing cooks slowly so keep basting the bird and don't take it out until the center of the stuffing reads 165 degrees.
