How do they make that fried chicken?
Q: There are a couple of places that serve half of a whole fried chicken. The chicken is fried in less than 10 minutes. Now prior to frying the chicken, do they boil or oven the chicken?Theres no way the chicken be deep fried in such a short amount of time.Just curious....
A: I personally have never heard of a half a chicken being fried whole, but I guess there is a first time for everything. Whenever I’ve encountered half of a fried chicken, it’s always been cut up into the traditional pieces.Speculation is always difficult and it’s impossible to make a statement with any certainty, but they likely use a pressure cooker to fry this chicken instead of the simple deep fryer. The pressure cooker is key to making what many people, including myself call Kentucky-style fried chicken. Colonel Harland Sanders of Kentucky Fried Chicken is credited with being the first person to utilize a pressure cooker to increase the speed at which chicken can be fried. This method is still used to this very day by KFC as well as many other chicken chains. The fried chicken sold through many grocery store counters and through many caterers is also cooked by the same or a similar method. It allows them to cook large amounts of chicken very quickly with fair to excellent results. In addition to this, there is a possibility that the chicken might spend at least some time in the oven, either to partially cook it or in some take off on so called oven-fried chicken. Since I don’t know about the restaurant’s method of service, it is also possible that the chicken might not be truly cooked to order. They might start cooking the chicken beforehand in order to speed up service. Without any knowledge of the restaurant’s operation it is difficult to say anything about this at all. The size of the chicken also might play a role, as a very small bird might be used to some advantage as well. These were merely some very educated guesses based on what goes on in other parts of the industry. As I don’t know the particulars about this particular establishment, it’s hard to go any farther in guessing how they cook and serve their chicken.I hope this answer helps.

Cover and refrigerate for 12 to 24 hours.Melt enough shortening (over low heat) to come just 1/8-inch up the side of a 12-inch cast iron skillet or heavy fry pan. Once shortening liquefies raise heat to 325 degrees F. Do not allow oil to go over 325 degrees F.Drain chicken in a colander. Combine salt, paprika, garlic powder, and cayenne pepper. Put thighs in the center, and breast and legs around the edge of the pan. The oil should come half way up the pan. Cook chicken until golden brown on each side, approximately 10 to 12 minutes per side. More importantly, the internal temperature should be right around 180 degrees. (Be careful to monitor shortening temperature every few minutes.)Drain chicken on a rack over a sheet pan. Don't drain by setting chicken directly on paper towels or brown paper bags.
